Hello and welcome to my cooking website! My name is Laci and I have Lactose and Histamine Intolerance (HIT), originating in a yet unidentified Mast Cell Activation Disorder (MCAD).

MCAD are rare and complex disorders that affect the body’s immune system and can cause multi organ symptoms like chronic fatigue, digestive issues, and allergy like symptoms, for example after histamine rich food. 

I had had warning signs of a systemic disease for years but my major symptoms (diarrhea, bloating, rashes, itching, fatigue, depression, anxiety, heat/stress/exercise intolerance, UTIs, chronic prostatitis) started to occur approximately a year ago. Since then, I have seen dozens of doctors, tried several different treatment options with bigger or smaller success. What I have certainly learned in the past year, that a balanced low histamine diet is key to getting better with HIT and/or MCAD. 

It is not an easy diet to keep up with, especially if you are a vegetarian, like me. In the beginning of my journey, I was shocked by the list of histamine rich food and triggers I needed to avoid in the future. I was concerned whether I would find enough nutrition from a low histamine, gluten free, lactose free vegetarian diet. After 8 years of being a vegetarian, going back to meat was not an option for me. That’s why I started to try out new recipes and tweak original Hungarian recipes of my grandma to accommodate my new dietary needs. 

Starting with the elimination diet was hard, but step by step I managed to re-introduce food I love thanks to medications and lifestyle changes. As someone who lives with HIT and MCAD, I understand firsthand the challenges of finding and preparing foods that are safe and nourishing for my body.  

Despite these challenges, I am passionate about cooking and sharing delicious and healthy recipes with others. On my website, you will find a variety of recipes that are tailored to meet the needs of those with HIT and/or MCAD and other food sensitivities.
