Who needs eggplant for their ganoush? Zucchini is a perfect substitute! This low histamine dip is ready in no time and perfect for the afternoon when you feel a little peckish. Perfect with your favourite gluten free bread or rice/corn waffles.

Cook time: 35 mins
Ingredients:
1-2 Mid sized zucchini (500-600 g)
200 g Lactose free Quark
3 Cloves of garlic
Parsley
Extra virgin olive oil
Salt, pepper
Step by step instructions:
1. Preheat the oven for 210 C
2.Slice the zucchini and distribute them in a baking pan with 2 cloves of garlic. Add salt, pepper and olive oil
3. Bake for 35 mins (take out garlic after 10-15 mins otherwise it burns)
4. Let it cool down for 10 mins, then purée it with a mixer
5. Add quark, parsley and one fresh garlic (optional), season with salt and pepper
