This nutritious low histamine soup is very easy to make and is perfect for lunch. I am a big fan of creamy soups in the autumn and the winter. They are easy, fast and go very well with your favourite bread. 🙂
Prep time: 5 mins
Bake time: 35 mins
Ingredients:
500 g Broccoli
1 Leek
3 Cloves of garlic
Broth (powder also ok, but check for ingredients)
200 ml Lactose free cream
Parsley
Salt, pepper
10 g Lactose free butter
Step by step instructions:
1. Wash the veggies and cut them into pieces
2.Cook with water and some broth for approximately 30 minutes
3. Strain the cooking water form the veggies and save it in a cup.
4. Puree the vegetables with a hand mixer
5. Add the cream, fresh garlic, parsley, butter and as much water as it takes up. Cook for 5-7 minutes.
Serve with fresh parsley and olive oil.
