Cheesy Beetroot Patty with Tzatziki

Delicious low histamine veggie patties as my granny would have made them

I always loved my grannies meat patties when I was a kid. As I don’t eat meat anymore I looked for some alternatives to bring back the memories of those yummy patties my grandma made. This is her original recipe, instead of meat I use beetroot. 

Prep time: 25 min

Fry time: (with top approx) 15 min. Additional 10 mins without top (until golden brown)

Ingredients:

Patty

500 g beetroot

1 Egg yolk

100g Young cheese (I use gouda)

1 Small onion

1 Clove of garlic

1 Tbl spoon gluten free flour

Gluten free breadcrumbs (for coating)

1 T spoon red paprika powder

Thyme 

Parsley

Salt, pepper

Tzatziki

1 Cucumber

200g Lactose free quark

10g Dill

1 Garlic 

Bit of mint

Splash of extra virgin olive oil

Step by step instructions:

1. Grate the beetroot add a little salt and let it sit for 10-15 minutes

2. In the meanwhile prepare the Tzatziki: carve out the seeds form the cucumber with small spoon and grate it in a small ball. 

3.Add salt, pepper, dill, mint and quark. Mix and put it in the fridge until the patties are ready. 

4. Put the beetroot in a clean cloth and push the excess water out (this is an important step, otherwise the beet is too watery and won’t stick together).

5.Add salt, pepper, red paprika powder, egg yolk, flour, thyme and parsley and mix together thoroughly. 

6. Grate the onion and cheese, mix it together with the beets.

7. Heat up oil to medium heat and form patties from the beets. 

8. Before frying coat them with breadcrumbs (this makes the patties nice and crunchy). 

9. Fry it covered on medium heat for 15-20 mins (turn occasionally), then on high heat until both sides are golden brown. 

Serve immediately with fresh herbs.
