This is really one of my favourite dishes of all time! Not only healthy and full of veggies, but also really tasty and nutritious.

Cook time: 80 min
Ingredients:
2 carrots
1 parsley root
100 g root celery
3 beetroot
250 g cabbage
1 Onion
3 Cloves of garlic
Dill
Apple cider vinegar
2 Bay leaves
Broth
Lactose free Creme fraiche
Step by step instructions:
1. Cut the carrots, parsley root, root celery in small pieces, the beetroot into bigger ones.
2. Fry the onion and garlic on oil, add the veggies, fry and stir occasionally.
3. Add 1,7 Liter water, your trusted broth, bay leaves, salt, pepper and cook for about 45 minutes
4. Cut the cabbage, half of the dill and add to the soup cook for another 30 minutes.
5. When the cabbage is soft, add the remaining dill and 1-2 tablespoon apple cider vinegar.
Serve with crème fraiche and fresh dill.
